Lunch Lady Brownies

Lunch Lady Brownies are rich, fudge brownies with a layer of fudge frosting; a throwback to those delicious brownies from our school days.

Ingredients

For the Brownies:

  • 1 cup butter melted
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 4 teaspoons vanilla extract

For the Chocolate Frosting:

  • 1/4 cup butter softened
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar

Instructions

For the brownies:

  • Preheat oven to 350. Line a 13 x 9 baking pan with foil and spray with cooking spray. Set aside.
  • In the bowl of an electric mixer, add the melted butter and cocoa powder, blend until smooth.
  • Add the flour and sugar and mix until combined.
  • Add the eggs and vanilla, mix until just combined. Do not over mix.
  • Pour batter into prepared pan and spread evenly.
  • Bake for 25-25 minutes or until a toothpick inserted in the center comes out clean.
  • Let brownies cool for 15 minutes then spread with frosting. You want the brownies warm when you frost them.

For the Frosting:

  • Add all ingredients to a bowl and mix until combined and smooth.
  • Pour over warm brownies and smooth out.
  • Let brownies cool before slicing.
