Hot Chocolate Master Blend

Hot Chocolate Master Blend is a fine powder of high quality milk chocolate and bittersweet chocolate for using in hot chocolate, ganache, cakes, or chocolate sauce recipes.

Ingredients

For the Master Blend:

  • lbs high quality milk chocolate finely chopped
  • 12 oz. high quality bittersweet chocolate finely chopped

For One Perfect Cup of Hot Chocolate:

  • cup milk
  • cup heavy cream
  • ½ cup The Master Blend from above

Instructions

For the Master Blend:

  • On large cooking sheets combine both ingredients, freeze for one hour.
  • Process the mixture in a food processor to make fine granules.
  • Do not process too long or the chocolate will melt.
  • Transfer to a storage container.
  • Makes 9 cups.

For One Perfect Cup of Hot Chocolate:

  • Combine milk and cream in small saucepan and heat mixture until just boiling.
  • Remove saucepan from heat, and add The Master Blend. DO NOT STIR.
  • Let stand for 5 minutes.
  • Then whisk until smooth.
