Bailey's Irish Cream Chocolate Rice Pudding

Rich, creamy, and infused with a boozy hit of Bailey's liqueur, this easy Irish Cream Chocolate Rice Pudding is the most decadent dessert of all time. Best of all, it comes together quickly with leftover rice and a few pantry staples!

Ingredients

  • 1 1/2 cups cooked rice
  • 1 1/2 cups milk
  • 1/8 teaspoon salt
  • 1/2 cup Baileys Irish Cream
  • 3/4 cup chopped chocolate or 60% chocolate chips
  • 1 egg beaten
  • 1/4 cup sugar
  • 1 tablespoon butter
  • 1 teaspoon vanilla

Instructions

  • Combine cooked rice with 1 1/2 cups of milk and salt, and cook over medium heat until thick and creamy (for about 15 minutes).
  • Then, stir in chocolate chips, Baileys, and the egg. Stir continuously until chips are melted and egg is set about 3-4 minutes.
  • Remove from heat and stir in butter and vanilla.
  • Pour into glasses and either serve warm or put into the refrigerator to cool.
