This recipe is originally from Good Housekeeping Magazine.

  1. Preheat oven to 350.
  2. In a large bowl combine corn syrup, sugar and salt.
  3. Add 2 cups of peanuts and stir to coat.
  4. Spread evenly in a single layer on parchment paper-lined pan and bake for 15 minutes or until brown and caramelized.
  5. With two forks separate the nuts and then cool completely.
  6. Stir into melted dark chocolate until well coated and then spread evenly onto waxed paper.

Tips & Variations

  • Switch the chocolate. Use white chocolate, milk chocolate, or all three.
  • Swap the nuts. Try it with pecans, hazelnuts, walnuts or your favorite or a combo.
  • Add vanilla. Just a little vanilla in the caramel would be lovely.
  • Mix-ins. Toss in some dried fruit pieces, coconut flakes, or sunflower seeds.

Storage

This bark is best stored in an airtight container in a cool place or refrigerated.
