On cold mornings, I love the make a big pot of hot chocolate so that I can start the day with not only something that I love but something that is chocolatey and delicious.

So much better tasting than oatmeal, not necessarily healthier but definitely more chocolaty, that is unless you are having some of my scrumptious Chocolate Chip Oatmeal

NOTE: I often do not add the Bourbon when I make this Mississippi Mud Pie Hot Chocolate, but a lot of people love it this way for an afternoon or evening drink.

How to Make Mississippi Mud Pie Hot Chocolate

This recipe is originally from Phillip Ashley Rix, The Local Palate Magazine, December 2015.

  1. In a medium pan combine milk, cream and the scraped beans from the vanilla bean as well as the pod.
  2. Set over medium heat until hot.
  3. Add chocolates, stir until completely melted and incorporated.
  4. Turn to low, add cinnamon and stir.
  5. Remove the vanilla bean.
  6. Mixture will thicken as it simmers, be careful not to scotch the mixture.
  7. Stir in the bourbon and remove from heat.
  8. Pour into cups and add garnish.

Tips & Variations

  • Change the chocolate. Try all dark chocolate for an even darker, richer drink.
  • Switch the topping. Swap the marshmallows for a dollop of whipped cream.
  • Add more spice. Replace the bourbon with a cinnamon-flavored whiskey or liqueur for extra warmth.

Storage

Make a big pot and keep it ready for all day use. Refrigerate leftovers overnight and reheat, making sure to mix ingredients again for best flavor.
