Pumpkin Bread with Chocolate Chunks

In this easy pumpkin bread recipe, moist perfectly spiced pumpkin bread becomes even more delicious when we add in lots of rich chocolate chunks. The result combines two favorite seasonal flavors – pumpkin and chocolate – in one moist, tender bite. Make a few loaves for yourself and some to give as holiday gifts, too!

I love pumpkin bread and I have been known to eat a piece of chocolate of two but never, in all of the years I have made anything with pumpkin, have I combined the two.

I think it is now my favorite way to have pumpkin bread! Try this the next time you are baking up a loaf, and I promise you will not be disappointed.

Sorry I do not have any after photos of the sliced pumpkin bread with chocolate chips so that you could see the delicious chocolate chunks nestled with all the pumpkin goodness…we ate it all!

Ingredients

  • Pumpkin puree
  • Large eggs
  • Vegetable oil
  • Water
  • All purpose flour
  • Sugar
  • Baking soda
  • Salt
  • Cinnamon, ground cloves, ground nutmeg
  • Chocolate chunks

How to Make Pumpkin Bread with Chocolate Chunks

This recipe is adapted from Paula Dean.

  1. Preheat oven to 350
  2. Spray pans with non stick spray or grease with oil.
  3. In a large bowl, combine pumpkin, eggs, oil, and water.
  4. In separate bowl combine all  dry ingredients.
  5. Gradually add dry mixture to wet. Stir to combine.
  6. Pour mixture into prepared pans.
  7. Bake until toothpick comes out clean.
  8. Cool on wire rack 15 minutes, then remove from pan and cool completely.

Tips & Variations

  • Switch the chunks. Try white chocolate or regular dark chocolate chips.
  • Add nuts. Add in some toasted walnuts or pecans.

Storage

Once your pumpkin loaf has cooled to room temperature, it can be stored in the refrigerator for about one week by wrapping it in plastic wrap or by placing in an airtight container.

Freeze this loaf by wrapping in plastic and placing in an airtight container for up to 2 months. Remember to let it thaw to room temperature overnight in the fridge before serving.

  • 4 large eggs beaten
  • 1/2 cup vegetable oil
  • 2/3 cup water
  • 3 1/2 cups all-purpose flour
  • 3 cups sugar
  • 2 tsp baking soda

  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
