Chocolate Chip Cookie Brownies have a moist, chocolatey, chewy brownie base and a melty chocolate chip cookie layer on top for pure decadence. What could be better?
I have seen recipes for chocolate chip cookie brownies (AKA Brookies) for years, at the bakeries, on blogs and on Pinterest. This week I finally got around to making a batch and my goodness they are delicious! I mean what could be better than a brownie and a chocolate chip cookie together?
I used a recipe from one of my favorite blogs Pinch of Yum. Lindsay’s recipes are always quick, easy and so tasty. This recipe is all of the above not to mention rich and chocolaty, especially as it starts with a brownie mix.
Don’t these look fabulous? I cannot tell you how moist, chocolatey, chewy and gooey these are but I hope the photos give you a little hint.
I have made these brownies three times in the last week and have given them to family and friends (not to mention eating my fair share) and everyone has loved them.

Why you’ll love these Chocolate Chip Cookie Brownies
Combination of two favorite desserts of all time
Rich, decadent, deliciously fudgy with melty chocolate chips
Uses boxed brownie mix for a quick and easy dessert

Ingredients
Butter
White sugar
Brown sugar
Egg
Vanilla
Flour
Baking soda
Salt
Semi-sweet chocolate chips
60% Ghirardelli chocolate chips
Box of Ghirardelli Double Chocolate Brownie Mix (plus egg, oil, water for the brownie mix)
Cream together butter and sugars in a small mixing bowl.
Add vanilla and egg.
Cream together again until smooth.
Add the flour, baking soda and salt.
Stir gently until incorporated.
Add chocolate chips and mix gently.
Preheat oven to 350.
Prepare brownie mix as directed.
Pour into 8×8 inch greased square pan.
Scatter the pieces of cookie dough over the surface of the brownie batter and press into the batter a little. You will have extra batter left from the cookie dough unless you want to use it all. You can save the extra to make cookies.
Bake brownie/cookie mixture for 30-40 minutes, cover with foil if the cookies are getting too brown on top. If you like your cookies gooey than cook them for 30-35 minutes, if you like them more firm bake for 35-40.
Remove from oven and cool for 10-15 minutes before serving.
Tips & Variations
Add some nuts. Try some toasted chopped pecans or walnuts to the brownie mix and/or cookie layer.
Change the chocolate. For the same flavor but different chocolate, swap out chocolate chips for white chocolate, milk chocolate, or butterscotch chips.
Make them minty. Add peppermint extract to the brownie mix and mint chocolate chips to the cookie layer.
Drizzle the tops. For even more decadence, add a drizzle of melted white or chocolate chips on top.
Storage
Store these brownies on a countertop for 2 days, then refrigerate for up to 5 days. To freeze, cut the brownies into squares, wrap tightly in plastic wrap and store in a freezer-safe container for up to 2 months.
