Bailey’s Irish Cream Chocolate Rice Pudding

Rich, creamy, and infused with a boozy hit of Bailey’s liqueur, this easy Irish Cream Chocolate Rice Pudding is the most decadent dessert of all time. Best of all, it comes together quickly with leftover rice and a few pantry staples!

I don’t know about you but I always have leftover rice, either from carry-out or when I make it at home.

Instead of reheating it, I like to reuse it to make one of my all-time favorite desserts, rice pudding. This week I thought I would adapt a recipe I have used in the past to include chocolate(of course) and a little Baileys Irish Cream.

Ingredients

  • Cooked rice
  • Milk
  • Salt
  • Bailey’s Irish Cream
  • Chopped chocolate or 60% chocolate chips
  • Egg
  • Sugar
  • Butter
  • Vanilla extract

How to Make Bailey’s Chocolate Rice Pudding

This recipe is adapted from All Recipes.

  1. Combine cooked rice with 1 1/2 cups of milk and salt, and cook over medium heat until thick and creamy (for about 15 minutes).
  2. Then, stir in chocolate chips, Baileys, and the egg. Stir continuously until chips are melted and egg is set about 3-4 minutes.
  3. Remove from heat and stir in butter and vanilla.
  4. Pour into glasses and either serve warm or put into the refrigerator to cool.

Tips & Variations

  • Try a different liqueur. This pudding would be great with Frangelico or Kahlua, too. Try your favorite and see what you think.
  • Use dark chocolate. For a richer, bolder flavor, choose a chocolate with a high percentage of cocoa solids.

Storage

Keep the pudding covered with plastic wrap to avoid forming a skin, then store in the fridge for 3-4 days.

  • 1/2 cup Baileys Irish Cream
  • 3/4 cup chopped chocolate or 60% chocolate chips
