Chocolate Brownie Cookies

I have been baking a bunch of great things lately and these brownie cookies are just one of them. Let me tell you, if you are a fan of brownies and rich, chocolaty cookies than these are something you want to make.

Ingredients

  • Butter
  • Semisweet chocolate squares, chopped
  • Semisweet chocolate chips, divided
  • Flour
  • Baking powder
  • Salt
  • Large eggs
  • Sugar
  • Vanilla extract

How to Make Chocolate Brownie Cookies

This recipe is adapted from Southern Living Magazine.

  1. Combine butter, chocolate, and 1 1/2 cups of chocolate chips in a saucepan.
  2. Cook over low heat, stirring constantly until butter and chocolate are melted. LET COOL.
  3. Combine flour, baking powder, and salt, set aside.
  4. Beat eggs, sugar and vanilla on medium speed with and electric mixer.
  5. Gradually add dry ingredients to the egg mixture.
  6. Add the COOLED chocolate mixture and beat well.
  7. Add chocolate chips and stir.
  8. Scoop onto baking sheets 1 inch apart.
  9. Bake at 350 for 10 minutes.
  10. Cool slightly on the baking sheet, then remove to wire racks to cool.

Tips & Variations

  • Add espresso. A couple of pinches of espresso powder will deepen the chocolate flavor.
  • Make them minty. These cookies taste amazing with peppermint extract and mint-flavored chocolate chips.
  • Make them teeny. Make lots of teeny cookies (be sure not to overbake!) if you want to feed bite-sized cookies to lots of people.

Storage

These cookies can be stored in an airtight container in a cool place for up to 5 days.

  5. I don't know what I did wrong, but these were a big flop. They tasted AMAZING! But they didn't set up and wouldn't come off the pan without falling apart. I'm going to scrape off what I haven't taken off yet and use it all to make a trifle. But I'm disappointed that I don't have cookies. Yours are so pretty. Mine, not so much.
