Hot Chocolate Master Blend is a fine powder of high quality milk chocolate and bittersweet chocolate for using in hot chocolate, ganache, cakes, or chocolate sauce recipes. This simple recipe from Chicago’s Chef Mindy Segal makes it easy to whip out your favorite recipes when you have big chocolate ideas but you’re short on time.

I know that many are experiencing unseasonable weather, either cold where it is normally warm or hot where it is normally snowy and cold. Either way, what could make you feel better on a winter day than a good book and of course a good cup of cocoa.

I make hot chocolate everyday 365 days a year, it is my beverage of choice and I love trying new recipes of standard hot chocolate.

This blend can be for a delicious cup of hot chocolate as well as several other delicious chocolate desserts, such as chocolate sauce, ganache, chocolate marshmallow cake and more.

Ingredients

For the master blend:

  • High quality milk chocolate
  • High quality bittersweet chocolate

For One Perfect Cup of Hot Chocolate:

  • Milk
  • Heavy cream
  • The Master Blend (from above)

How to Make Hot Chocolate Master Blend

This recipe is from Chef Mindy Segal.

For the Master Blend:

  1. On large cooking sheets combine both ingredients, freeze for one hour.
  2. Process the mixture in a food processor to make fine granules.
  3. Do not process too long or the chocolate will melt.
  4. Transfer to a storage container.
  5. Makes 9 cups.

For One Perfect Cup Of Hot Chocolate:

  1. Combine milk and cream in small saucepan and heat mixture until just boiling.
  2. Remove saucepan from heat, and add The Master Blend. DO NOT STIR.
  3. Let stand for 5 minutes.
  4. Then whisk until smooth.

Tips & Variations

  • Add espresso powder. To make mocha-flavored hot chocolate and desserts.
  • Throw in some spice. Try adding some pumpkin spice, cinnamon, cardamom, or nutmeg.
  • Include vanilla. Some vanilla powder will enhance your chocolate blend.
