Triple Chocolate Blondies

Triple Chocolate Blondies are thick, luscious blonde brownies loaded with three kinds of chocolate chips for an extra-chocolaty, chewy dessert bar. They’re utterly delicious and perfect for potlucks and parties!

Brownies, bars, and cereal treats are some of my favorite things to make for sharing at events or get-togethers. They are typically fast, easy, and delicious. Not to mention that, for the most part, you can add most anything to them to “kick them up a notch” like toffee chips, chunks of peanut putter cups, etc.

These blondies are exactly the sort of recipe that I am referring to; they have been around forever, and in fact are known by many names, Congo Bars, Samoa Bars, Blondies, and more.

My grandmother had this recipe written on a note card, I have no idea where it came from, my guess is that it is over 20 years old because she has been gone that long.

I have to be honest, I have never really liked blondies from bakeries or other places. I think the main reason is because there are never enough chips to suit my taste and they are often over-cooked. I run a chocolate blog, so clearly, I want maximum amounts of chocolate!

This recipe was different, though. I could have eaten the entire pan, and in one evening I ate an entire row before they were cooled.

These blondies are rich, moist, have a slightly crunchy top and are oozing with chocolate, especially slightly cooled from the oven.

Ingredients

  • Butter
  • Dark brown sugar
  • Flour
  • Salt
  • Baking powder
  • Baking soda
  • Eggs
  • Vanilla
  • 60% dark chocolate chips
  • Semi-sweet chips
  • Milk chocolate chips

How to Make Triple Chocolate Blondies

  1. Preheat oven to 350.
  2. Prepare a 9 x 13″ pan. I use cooking spray and then line with foil or parchment and then spray again.
  3. In a medium bowl combine melted butter and brown sugar, stir until combined.
  4. Add the eggs and vanilla extract and whisk until combined.
  5. Add the flour, salt, baking soda and powder, mix until just combined. Do not over mix.
  6. Add the chips and stir until combined.
  7. Pour into pan and bake for 25-30 minutes, do not over bake.
  8. If you like your bars gooey then cook for less time.
  9. Let cool (if you can!) and then cut and serve.

Tips & Variations

  • Load them with mix-ins. Add your favorite chopped candies, like Reese’s cups, toffee bits, Snickers, coconut, chopped nuts, white, butterscotch, or peanut butter chips, or whatever you have on hand.
  • Frost ’em. Add a thin layer of chocolate ganache or a thick layer of chocolate buttercream frosting.
  • Swirl-ins. Add a swirl of peanut butter, Nutella, or marshmallow creme.

Storage

These blondies can be stored unrefrigerated in a covered container for up to 4 days, then refrigerated or frozen.

Ingredients

  • ¾ cup butter melted
  • 2 cups dark brown sugar
  • 2 ¾ cups flour
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 3 eggs

  • 1 cup 60% dark chocolate chips
  • 1 cup semi-sweet chips
  • ½ cup milk chocolate chips
