Zingerman’s Bakehouse Black Magic Brownies are full of deep dark chocolate, in between cakey and fudgy, and chewy in the best possible way. If you love rich, chocolatey brownies, you have to give this recipe a try!

While I was born in Michigan and lived there for many years, I have not been to the world famous Zingerman’s Bakehouse or the Deli in Ann Arbor.

But when I had the chance to review a copy of the Zingerman’s Bakehouse cookbook, I couldn’t wait to try a few of their recipes. 

The Zingerman’s Bakehouse cookbook shares 25 years of the their best bread and pastry recipes with home cooks and bakers. There are 65 recipes for bagels, Detroit style pizza, French Cruller donuts, Rhubarb pie, brownies and more. Because I love brownies, that was the first recipe that caught my eye.

The bakehouse actually makes three different brownies, the Black Magic which are plain brownies, Magic brownies with walnuts and Buenos Aires brownies with dulce de leche in the middle.

I made both the Black Magic and the Magic brownies and they were both fabulous.

  • Unsweetened chocolate
  • Unsalted butter
  • Pastry flour
  • Baking powder
  • Large eggs
  • Granulated sugar
  • Sea salt
  • Vanilla extract

How to Make Zingerman’s Bakehouse Black Magic Brownies

This recipe is originally from the  Zingerman’s Bakehouse cookbook.

  1. Preheat the oven to 350.
  2. Prepare a 9 x 13″ baking pan with baking  spray . I like to line my pan with foil and then spray it so that I can easily lift the brownies out.
  3. In a double boiler, melt the chocolate and butter and set aside.
  4. In a medium mixing bowl combine the flour, and baking powder.
  5. Mix with a whisk to eliminate the lumps.
  6. In a large mixing bowl or the bowl of a stand mixer combine the eggs, sugar, salt and vanilla.
  7. Beat with a whisk until well aerated, about 5 minutes.
  8. Add the melted chocolate and whisk to combine.
  9. Stir in the dry ingredients using a rubber spatula.
  10. Pour the batter into the prepared pan, spread the batter evenly.
  11. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  12. Cool on a cooling rack for at least an hour.
  13. Cut into squares.

Tips & Variations

  • For Magic Brownies: Add 1 1/4 cup toasted walnuts and stir in at step #9 in the instructions above.
  • Make them fancy. These brownies will taste fantastic with frosting, so try chocolate frosting, vanilla buttercream, coffee-flavored, peanut butter, or your favorite.

Storage

Zingerman’s Bakehouse Black Magic Brownies can be stored on a countertop, covered for one day, then refrigerate, covered for up to 4 days. They can be frozen when wrapped tightly in plastic wrap and stored in a freezer safe container for up to 2 months.

  • ¾ cup softened unsalted butter plus 2 Tbsp
  • 1 ½ cups pastry flour
