S’more Brownies

With layers of brownies, graham cracker cereal, marshmallows, and chocolate chips, these S’more Brownies are crunchy, gooey, and remind you of summers around the campfire! Perfect for bake sales, potlucks, and anytime you’re craving a little comfort.

Who doesn’t love s’mores? I especially love the combination of crunchy graham crackers with the bite of the chocolate. You can easily replicate this flavor experience by making a batch of homemade brownies, which makes them much easier to prepare ahead of time, too!

These S’more Brownies are also fabulously rich and chocolatey! I made these and gave a large pan of them to friends, and a week later they are still raving about them. They loved the combination of textures and the twist on a s’more.

  •  Ghiradelli brownie mix plus the egg, water, oil 
  • Mini marshmallows
  • Chocolate chips
  • Graham cracker cereal

How to Make S’More Brownies

This recipe is inspired by The S’mores Cookbook.

  1. Prepare brownies according to directions on the back of the box for an 8 x 8 inch pan.
  2. Line pan with tin foil that hangs over the pan at least two inches.
  3. Make sure to spray the tin foil with cooking spray.  
  4. Bake for required time and then remove from oven.
  5. Spread marshmallows over the surface and let melt.
  6. In the meantime over low heat melt the chocolate chips until creamy and smooth, add the cereal and mix.
  7. Pour the chocolate mixture over the marshmallows.
  8. Cool until the chocolate is just set and then cut and return to the refrigerator until firm. 

Tips & Variations

  • Change the cereal. Use crushed regular graham crackers instead of cereal.
  • Try different chips. Try using milk chocolate, bittersweet or white chocolate chips or even peanut butter chips for a real change.
  • Switch the marshmallows. For a festive look, try colored marshmallows.

Storage

Store in an airtight container at room temperature and eat within 3-4 days.
