I love chocolate chip cookies, admittedly, I like the raw dough probably as much as the actual cookies, and I am constantly on the hunt for the “best” one that suits my taste. I do not like flat cookies!
These cookies were on my Pinterest board, for a long time, but I was a bit afraid of the amount of butter. Don’t be afraid of the butter, you’ll be delighted with your cookies! There’s also a ton of chocolate chips which make them over-the-top fantastic.
This recipe makes literally dozens of regular-sized cookies, which could be a good thing or a bad thing depending on your New Year’s resolutions. But you could make half the recipe or just give some away to your family, your friends, the mailman, and anyone else on your gift-giving list!

Ingredients
Unsalted butter
Granulated sugar
Dark brown sugar
Eggs
Vanilla
Baking soda
Kosher salt
Flour
Semi-sweet chocolate chips
How to Make Ritz Carlton Chocolate Chip Cookies
Preheat oven to 350.
Line a baking sheet with parchment or a Silpat baking liner, set aside.
In a stand mixer fitted with a paddle cream together the butter, brown sugar and the granulated sugar until light and fluffy about 2 minutes.
Add the vanilla and eggs and mix until incorporated.
In a another bowl mix the flour, baking soda and salt.
Add to the sugar mixture. Stir until just incorporated.
Stir in the chocolate chips.
Scoop batter onto baking sheets. (I used an ice cream scoop)
Bake for 10-12 minutes until the edges are brown and centers are almost set.
Remove from oven, cool a bit on the pan then remove to wire rack to cool.
Tips & Variations
Load them up. I added 2 Tbsp. of vanilla and used 65% dark chocolate chips, plus I added an extra cup of chocolate chips.
Chill the dough. I did this and it made the cookies firmer and they didn’t tend to spread out too much with all the butter. Better flavor, too!
Add some nuts. These Ritz Carlton chocolate chip cookies are already rich, but if you love nuts, some chopped pecans or walnuts will be just the right addition.
Add some candy. Adding crushed toffee candy will add a sweet toffee crunch.
Storage
To keep your Ritz Carlton chocolate chip cookies soft, wrap them in plastic and store in an airtight container on the countertop for 3-4 days, then refrigerate. You can freeze them for up to 4 months in the same wrappings.
