Peanut Butter Pretzel Bars Recipe

Take a basic Scotcheroo bar and elevate it with more peanut butter and pretzels and you get these Peanut Butter Pretzel Bars! They’re sweet, salty, and oh-so-crunchy, and the perfect quick dessert fix and for taking to picnics and BBQs!

I love bars, and in fact I am pretty sure that I make note of that each and every time that I post a recipe for them here. Seriously, what is not to love? They are easy, no bake, and you can add or subtract pretty much anything and they always taste delicious!
 
This bar is your standard Scotcheroo but with a twist, a little salt and a lot more peanut butter in the form of peanut butter cups, or in my case, peanut butter pumpkins.

These may be my new favorite cereal treat! The blend of the sweet and the salty flavors is a crunchy surprise and it is delicious!  

The great thing about the topping is that you can add whatever you have, pretzels, graham crackers, or even more cereal. As for the peanut butter cups, you could add whatever bars you have, Snickers, Twix, Kit Kat, all for a little added flavor and crunch!

Ingredients

For the Bars:

  • Sugar
  • Corn syrup
  • Peanut butter
  • Rice Krispie cereal

For the topping:

  • Chocolate chips
  • Broken pretzels
  • Snack-size peanut butter cups

How to Make Peanut Butter Pretzel Bars

  1. Prepare an 8 x 8 inch pan with cooking spray.
  2. In a medium sauce pan over medium heat, combine sugar and syrup and heat until sugar is dissolved.
  3. Then remove from heat and stir in peanut butter.
  4. Once incorporated, add the cereal and mix well.
  5. Pour into prepared pan and press down evenly.
  6. Set aside.
  7. In medium saucepan over low heat, melt the chocolate chips.
  8. Once melted, remove from heat and add the pretzels and mix well, then add the peanut butter cups.
  9. Pour chocolate mixture over the cereal mixture and smooth out.
  10. Cool, cut, and enjoy!

Tips & Variations

  • Sub the peanut butter. Use almond butter and almond butter cups for a change.
  • Change up the chips. Try white chocolate, milk chocolate or butterscotch chips.
  • Switch the candy. Add your favorite chocolate candy, like chocolate kisses, KitKat, Twix, Snickers, or whatever you have on hand.

Storage

These snack bars can be stored in a cool place for 2 days, then refrigerate to keep them fresh for up to 5 days.
