Chocolate Guinness Stout Brownies

These rich, fudgy Chocolate Guinness Stout Brownies that are dense like fudge and have a slightly nutty flavor due to Guinness Stout. Perfect for St. Patrick’s Day or anytime you need to satisfy your sweet tooth!

This week is St. Patrick’s day and there are a lot of great recipes out there to celebrate with. One of my absolute favorites are these Chocolate-Guinness Stout Brownies from Bon Appetit. This recipe is easy and delicious!

The brownies are dense, moist, and fudgy, more like a baked fudge than a regular brownie.

The stout gives a little bit of a nutty flavor and the coffee, which is my personal addition, makes the chocolate more rich.

The original recipe calls for frosting, but I just drizzled some extra melted chocolate across the tops and that was decadent enough for me!

Ingredients

  • Guinness Stout or your favorite chocolate stout
  • Strong coffee
  • Semisweet or bittersweet chocolate
  • Butter
  • Sugar
  • Eggs
  • Vanilla
  • Flour
  • Salt

How to Make Chocolate Guinness Stout Brownies

This recipe is adapted from Bon Appetit.

  1. Preheat oven to 350.
  2. Line a 9 x 9 baking pan with foil and cooking spray.
  3. In a medium saucepan bring stout and coffee to a boil and reduce to 1/4 cup. 
  4. In a double boiler or a bowl set over a pan of simmering water, melt the chocolate and the butter and stir until smooth. Set aside to cool a little. 
  5. Whisk eggs, sugar, and vanilla in a bowl to blend.
  6. Add the chocolate and the stout/coffee mixture.
  7. Once smooth, fold in the flour and the salt.
  8. Pour into prepared pan and bake for 30-40 minutes or until toothpick comes out with a few moist crumbs attached. 
  9. Cool on wire rack then enjoy.

Note: The original recipe does not include coffee, I add it because I think it makes the brownies taste richer. Also, the original had a chocolate stout glaze/frosting. I just drizzled mine with a little melted chocolate I had. You can obviously do whatever you like.

Tips & Variations

  • Add some nuts. Since they already taste nutty from the Stout, a few walnuts or pecans would enhance the nuttiness.
  • Try frosting them. Chocolate buttercream or chocolate ganache will also taste wonderful.
  • Change the beer. Don’t like Guinness? Substitute with your favorite beer or another liqueur of your choice.

Storage

These Chocolate Guinness Stout Brownies can be stored at room temperature for 24 hours, then refrigerate in an airtight container.

  • 12 oz. chocolate semisweet, bittersweet or a combination
  • 1 cup butter
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 3/4 cup flour
  • 1 teaspoon salt

Optional Glaze:

  • additional melted chocolate for drizzling

  1. Sounds delicious to me! May have to try baking some. I love dark chocolate and I also always add espresso granules to my chocolate when I bake. It does bring out the flavor of the chocolate. And I love Guiness! So this combinations sounds pretty good.
