When I was a child my favorite thing ever was hot fudge, I would eat it from the jar by the spoonful with or without a little ice cream.

My grandmother always made us homemade hot fudge to go with the hand churned ice cream that we used to make.

  • Heavy cream
  • Light corn syrup
  • Brown sugar
  • Dark cocoa powder
  • Salt
  • Dark chocolate
  • Butter
  • Vanilla bean paste
  • Bailey’s Irish Cream

How to Make Homemade Hot Fudge Sauce with Bailey’s

  1. Place heavy cream, corn syrup, brown sugar, cocoa, salt and half of the chocolate in a pan over medium-high heat.
  2. Bring mixture to a boil then let simmer for 5 minutes, stirring constantly otherwise the mixture will scotch and burn.
  3. Remove pan from heat and add the rest of the chocolate, the butter, vanilla, and the Bailey’s. Mix well and then let rest for 20-30 minutes.
  4. Pour into jars to store or over ice cream to enjoy immediately. 

Tips & Variations

  • Make it non-alcoholic. Just omit the Bailey’s and you have perfect chocolate hot fudge sauce.
  • Switch the alcohol. Try your favorite booze or liqueur, such as Kahlua, Amaretto, bourbon, etc.
  • Adjust the flavoring. Depending on which alcohol you use, add some of the same flavored extract such as almond extract, or a bit of espresso powder.

Storage

This hot fudge sauce will last in the refrigerator for about 2-3 weeks and is best stored in a glass container like a mason jar. You’ll want to warm it back up to make it hot again! Try warming it in a small pot on the stove or microwaving it very briefly until just warm enough.

Ingredients

  • 2/3 cup heavy cream
  • 1/2 cup light corn syrup
  • 1/3 cup brown sugar
  • 1/4 cup dark cocoa powder
  • 1 pinch salt
  • 8 oz. dark chocolate (I use 70-85% dark chocolate bars
  • 2 TBSP butter
  • 1 teaspoon vanilla bean paste
  • 4 TBSP Bailey’s Irish Cream

Instructions

  • Place heavy cream, corn syrup, brown sugar, cocoa, salt and half of the chocolate in a pan over medium-high heat.
  • Bring mixture to a boil then let simmer for 5 minutes, stirring constantly otherwise the mixture will scotch and burn.
